Not heard of Yacon. Interesting to hear that olluco isn't a potato. I'm allergic to it, but not to spuds, so that explains that. Have you heard of huacatay? That's a delicious peruvian herb.

olluco isn't quite a potato although it grows just the same way, which makes it rather rare and exotic in Europe. Can't remember the latin name right now but along with oca (which I also grow) olluco is what's described as one of the 'lost crops' of the Incas. Lost is one of those relative terms. It's particularly hard to get tubers to start plants over here from so there is something of a trade between those who have and those who want.

Apio is celery, according the Uruguayan list I consulted! Interesting because the Apios is the latin name for that plant and is nothing like celery that I can see, but this is the first year I've had it. Perhaps there is a flavour.

If you ever take pictures of veggies in markets, I'd love to see them and any other info. you might have about some of the weirder beans, corn and tubers you spot. Yacon is another thing I'm looking to learn about.

Here in South America, olluco is a variety of potato, with a shape and color not unlike New Potatoes, but quite a different flavour.
And Apio is either Leek or celery, I can never remember which (because they're always sold havled and placed together, for a soup in the market here). In case it's any use.
